Broccoli Tahini
A raw vegetable side, that is delicioius alone or in a plant based bowl. I recommend enjoying it cold, but may be enjoyed warm.
**Raw Ingredients**
1 qt broccoli (or 1 head)
1 - 2 stalks of scallions
1/2 qt kale
**The Tahini Sauce**
1/2 cup olive oil
1/2 cup lemon juice
1/3 cup tahini
1 - 2 garlic cloves
1/2 tsp salt
Directions
1. Cut broccoli and kale into bite size pieces. Include the broccoli stem.
2. Cut the scallions into small pieces and add to broccoli and kale.
3. Blend tahini sauce in Vitamix. Pour over raw ingredients (broccoli, kale, scallions).
4. Mix everything together thoroughly.
